Meet the Chef Eric Brujan
Eric Brujan’s career, studded with Michelin-starred and internationally renowned restaurants, has now led him to Nice. Here the Chef has found the balance he was seeking to give his cuisine : where ingredients are skilfully mastered, their natural taste respected and enhanced by flavours from the far-away places inspired by his travels and experience.
After Boston, New Orleans, Paris and Japan, Eric had dreamt of working with the produce of Provence whose flavours, variety and colours he particularly appreciates.
Executive Chef of the Méridien Hotel in Nice since 2013, Eric has created innovative menus which give pride of place to organic, seasonal and locally sourced produce. Whilst respecting French culinary traditions his subtle associations of spices and seasonings set the imagination alight. He particularly enjoys working with vegetables.
